Best Irish Speciality at UK's Great Taste Awards!

In July we were over the moon with the news that our Smoked Silver Hill Duck had won a Three Star Gold at the 2010's Great Taste Awards in the UK.

In September the Guild of Fine Food had their awards presentation night at Fortnum & Mason and Ummera's smoked duck  was nominated for one of the Awards. Unfortunately I was not able to attend the Award Ceremony so I asked Lorna Duffy,  the member of Bord Bia’s Marketing Fellowship Programme working with Ummera in the UK, to attend the event in my place.

Christmas Orders

I am sorry to be talking about Christmas orders already, but we are going to have a challenging time this year.

Last winter was a very cold one throughout Europe and the effects are still being felt in different ways in different countries. Here in Ireland, one of the effects was to slow down the growth rate of farmed salmon, both organic and conventional; it was hoped that the warm summer would have compensated for the cold winter, but apparently not.

We are now faced with quite a serious shortage of Irish organic salmon this year and it is very unlikely that we will be able to meet the demand. We are currently working on how best to handle the situation, and how to prioritise our orders. 

We are committed to certain principles like full traceability, organic and Irish;  we are therefore not going to buy in salmon from Scotland or Norway to cover the shortage unlike other smokers who maybe more "flexible" than we are. Our packaging, our website, our marketing tells it simply - our smoked salmon is Irish and it's organic.

And we smoke the salmon, chickens, ducks, bacon and eels ourselves right here at Inchybridge, Timoleague. Anat, Andrzey, Jonathon, Marcin and myself are gearing up for a busy December!

We will be reviewing the order situation on a weekly basis, but two sayings come to mind:  One for you: "First come, First served" and one for us: "Hoisted by our own Petard" !
