Onion Scones with Smoked Salmon

Last December, I went to Amsterdam as part of a Good Food Ireland - Failte Ireland promotion with other members of Good Food Ireland.

Catherine Fulvio of Ballyknocken House and Cookery School was there and she made these wonderful Onion Scones and filled them with our Smoked Organic Salmon.

More on Eels

I am in New Zealand right now and we caught an eel this morning! An enormous eel!

Rangi and I are planning to smoke it for an important  Marae at Pakiri Omaha.
Further details and images to follow on my return next week.

To continue our earlier eel story,  the Irish Government have now confirmed that all eel fisheries will be closed this year and will be reviewed in 2012.  We'll see how the NZ eel comes out!
